Brassée avec un mélange de levure belge, levure sauvage et bactéries acidifiants, la Pyriforme (en forme de poire) est un assemblage de bières qui se sont reposées pendant un à deux ans en fûts de chêne. La bière a ensuite maturée pendant plusieurs mois sur poire biologique, avant la refermentation en bouteille.
