Brassée avec un mélange de levure belge, levure sauvage et bactéries acidifiantes, la Rhubarbe a commencé sa vie en tant qu'assemblage de saison maturée en fûts de chêne pendant un à deux ans. L'assemblage a ensuite refermenté sur rhubarbe avant la refermentation en bouteille.
