Assemblage de saison élevée en fûts de vin pendant un à deux ans, brièvement reposée sur marc de raisin, avant la fermentation en bouteille. Le marc utilisé dans cette bière est un mélange de Frontenac Noir et Marquette en provenance du Vignoble D'Oliva, situé à Les Cèdres en Montérégie.

Le Castor is an organic microbrewery located in Rigaud. During a construction traineeship in Scotland, the owners discovered the microbrewery universe. Back in Quebec, after a couple years working in construction, the owners founded, in 2012, this organic certified microbrewery.
